Omelette: eggs, water, salt & pepper
butter for frying the omelette
Filling: Butter, canned button mushrooms - sliced thinly
roast chicken meat - diced
canned pineapple - chopped 
Great brunch for one pax

Full of Hawallian flavor. Like Joyce, I've not added pineapples to my omelette. Would definitely give this a try. Thanks for sharing ^-^!

Celine's book is helping me use up my stock of canned pineapples! Rather nice taste too!
