Cookbook Countdown #5 ~ Honey & Co's Badargani - aubergine rolls with walnuts and pomegranate

 Welcome to Cookbook Countdown

 Dinner for two:
I used one large aubergine and scaled down the rest of
the ingredients accordingly, grilled the aubergines
instead of baking them... worked just fine.

The filling has diced aubergine, red onion, grated fresh ginger,
chopped parsley, toasted walnuts, and pomegranate seeds with pomegranate molasses.
Dinner not served yet (awaiting his Majesty's instructions)
to be paired with a lightly dressed mixed salad.

    Your Majesty must be very happy and satisfied with this dinner. It looks delicious, and I like eggplants! Never had it with pomegranate though!
