Cookbook Countdown #1 ~ MY's Sweet and Tangy Lotus Root Salad

Welcome to Cookbook Countdown!
I'm co-hosting Cookbook Countdown together with Joyce of Kitchen Flavours. If you are like us, who love to collect cookbooks and have an overcrowding bookshelf (or bookshelves!), yet most of the books have not been used at all, now is the time to change that. Join us at Cookbook Countdown
Check out the Hows and Tos HERE!

These are the only cookbooks by Martin Yan
that I collected over the years but not cooked a single
recipe from any of them!
I am cooking from MY's Chinatown Cooking for January 2016!
Sweet and Tangy Lotus Root Salad ~ pages 110-111
this has lotus root, cucumber, red radishes with a garnish of cilantro sprigs
for the dressing ~ it has sugar, rice vinegar,
minced cilantro, minced ginger, minced red chili
with a big squeeze of lime juice
after marinating the salad for ten minutes
serve at room temperature or refrigerate till chilled.
finally got to tick this off my-to-do-list!

  1. Hi Emily,
This looks wonderful! I would love to eat this chilled! Sweet, sour, spicy, crunchy! I like!

  2. Yup, chilled is definitely better, delish!
