Cookbook Countdown #16: Simple fried cauliflower rice

Super duper easy alternative to rice,
chopped up nicely with my new kitchen toy
first time (in a long time) fried the cauliflower rice
in ghee or clarified butter.  Rather pleasant indeed!
paired with crispy skin fish with caramelized ginger
and fresh red cili!

Cookbook Countdown #16: Spicy yogurt marinade for chicken

Another quick and easy chicken dish,
mix up the yogurt with the spices, marinate
the chicken (I used fillets) for three hours
you may roasted (I did) or grilled (better option!)

Cookbook Countdown #16: Cauliflower cheese

Firstly the bechamel sauce with two cheeses,
then steamed cauliflower
mixed well the two together,
topped with cheddar
I served this as a side to a chicken main
with purple slaw, recipe from pages 322-323 of
Hugh Fernley-Whittingstall's River Cottage Every Day
